You may wonder what is the difference between cacao and cocoa?  It is not just the spelling!  You may be more familiar with cocoa powder, which is commonly used for baking chocolate cakes and brownies.  While both cacao and cocoa come from the same beans, cocoa is fermented, roasted, and processed at a high temperature.
